Do you have a g sensor?
Maybe it's broken and the apps that use this sensor for orientation get the wrong information?!
Please correct me, if I'm completly wrong...
Unfortunately, some of the apps are designed to appear only in the vertical(portrait) mode. This is due primarily as the app was designed for the Phone and not the tablet. Android System Info is a good example of one app. Some apps came out initially in a Vertical mode, and then became position aware.
What are the apps and the version of the app you are having difficulty with? This might give an idea why.

You could try RotateD and see if apps will launch in the other orientation. Else you can edit the Android manifest.
