With my 8048 running sluggish. To fix do a system reset? Will this wipe my root? I really don't wanna do the whole process again lol

See my previous post. Do a system reset, and because you've pushed root to /system it'll stay rooted. You won't need to go back through the process unless you did it wrong initially.

Status update: the 7048 will actually run Minecraft PE, which is great, because it'd be a dealbreaker if my sons couldn't play it. It's plenty responsive, just change the settings to low graphics and you'll be fine.

rasputinAxP? did you create a System dump? after you rooted your device? post your system dump please because i have a problem with my device the 2nd partition is missing :(

i live in tarlac dre..

If you will boot to fastboot mode, I will help you fix your tablet.

to get into fastboot mode

reboot tablet as soon as you seen coby press and hold volume up count to ten

now as admin open terminal fastboot devices

'Volume Down' goes into recovery mode, but 'Volume Up' just makes it stay at the 'COBY' bootloader. As far as I can tell, the 7048's don't have fastboot. Being a telechips device, I would assume FWDN would work, but have not tried as of yet.

That is correct it should stay at the word Coby now type the fastboot devices command like I asked you to.
