CM7 is basically an custom android firmware to replace whatever firmware came with your phone or device. So CM7 can be used with many different phones and tablets. The specific flavor used for Nook color is code named Encore. you can use CM7 in your nook and it will have some of the tablet specific tweaks that was done for the nook

so if you follow the developments, the recent tt.RC2 rom was the precursor to the first Stable version that just got released - Latest Version - CyanogenMod Wiki

Stable release - means a complete, bug free(?) feature set
