The CM7 changelog for the pending build says "Add OVERLAY_HDMI_ENABLE to use in setParameter." Does that mean they're working on HDMI out for the NC?

might apply to other tablets since CM7 work is a general purpose ROM - but not to nook since we don't have an HDMI port

I don't think that you could do HDMI through the USB cord.

no, HDMI out will never come to the nook color. The changelog of CM7 is for every version of CM7 (or at least tablet versions). So HDMI out applies to hardware with HDMI ports, sorry.
