My personal favorite is ADW Launcher EX. It has a dock at the bottom (similar to the iOS dock) and you can add up to 9 home screens. Very tablet oriented IMO.
Here is my old setup, one screen, used Folder Organizer for the folders (at the top) and the "Hidden Dockbar" at the bottom for commonly used apps:
And I have recently redone mine to use a Hubs layout with 9 screens.
