Rooting what is it, and why should or shouldn't I?

Just as the title says what exactly is rooting an android? How do you go about doing so, and why should I, or when should I not root a device?

Depending on your device, it will vary. If it is an Eee Pad TF101, it varies greatly depending on which firmware build you have installed.
