I'm thinking ClockworkMod (CWM) for my Nexus 7 tablet... are there others, and why would they be better?

Clockworkmod is very good, haven't used anything else myself, it does what I need.

Make sure to get a version made for your specific device, though - it's custom tailored to each device's NAN storage partitions, etc. For me, there's only one option, and that's the CWM for the TC970 Le Pan 1 tablet. My Touchpad, now my son's, used CWM for the Touchpad, came with the installation package for CWM9.
