Can someone point me to an explanation of app icons?

I'm a very experienced computer user (47 years) but new to smartphones and tablets. What is frustrating me is no Help and no instruction manuals. For example GMail. Obviously I recognise the Bin but what's the star within the flag and how do I move an attached file into Gallery?
