would think its accessible through root explorer.. however I am not finding the directory for downloaded apps. I imagine you can copy and move the file to another folder (SD folder) and upload it to PC. any suggestions?

Root your tablet and use TitaniumBackup. Back the files up onto a usb drive, plug the drive into a pc afterwards, and then move them there.

Edit: I read the post again.

If you wanted to copy the actual apk files (which wont include settings, etc), then you still need to be rooted first. You can use Root Explorer and go to data/app (sometimes also data/app-private). Apps that came with the tablet are stored under system/app.
Copy the apks to mnt/sdcard and then you will have access to them when you plug the tablet into a pc.
