How to remove JellyBean?

I bought two of these tablets Amazon.com: Dragon Touch® 7'' Dual Core Y88 Google Android 4.1 Tablet PC, Dual Camera, HD 1024x600, Google Play Pre-load, HDMI, 3D Game Supported (enhanced version of A13) [By TabletExpress]: Computers & Accessories

I am going to use one for fun, but the other one i want to remove all the software and learn how to code on. So i first need to know how to remove the current software, and how to code this kind of tablet myself. I am currently looking for linux based coding. But if that fails, i might also need to know how to put Ubuntu onto this tablet and use it.

If you have anything that could help me, it would be greatly appreciated.

Welcome to the forum

You can't really remove the software, it's like trying toi boot a PC with no operating system. However when you learn more about what you are wanting to do you may be able to replace it with your own ROM (OS). It will probably require unlocking/rooting.
