I delete lots of useless stuff like bad videos often (on the road) so I'm wondering if it would bew possible to undelete things to replay them and maybe move it to a desktop PC to edit or correct?
If you deleted them from the SD card, there are lots of free undelete programs for your PC that can recover them. If they were on the tablet internal memory, probably not. There is no Recycle Bin.
The apps that are (or were) in internal memory are probably recorded in your Market app list, so you're covered there. AFAIK, applications use SD memory for storage, which works like your PC hard drive.
