Tech Illiterate, and need some help please.

I just received a Samsung Galaxy Tablet 10.1 with wifi and it seems to be working fine, BUT I have some issues I would love to resolve.

I know that if you tap twice the font size gets larger but if you want to read an article from the paper it returns to the original size. How can I increase the font size permanently?

How can I shut off the camera feature? I have zero use for it.

Avast or AVG, can either be downloaded to protect the tablet? I was trying, but I never received confirmation that it worked.
