You use the patches to update your tablet. Which this ROM is designed to do. Patches allows you to keep your game settings or other settings intact without having to redo, it every time you update the ROM.

I'm told there is an app to unlock all the levels but I prefer to have my scores too.

You can use Titanium backup for app/games and user data, this is what I use. I have successfully restored Angry Birds and my user data (level and scores). I had problems using compression, so you might want to disable it in the settings.
