updating to VIA 2.1

I think this is a stupid question, but I want to be safe.

I have a GB Tablet and I do NOT want to go to HC. I think the VIA 2.1 update is just system stuff and will not install HC.

Is that right?

I have not updated for fear it will install HC. Are my fears unfounded?

Yep. 2.1 is an updated version of Honeycomb. Honeycomb has been a good thing for my Vtab.

I have both the GB is more stable.

I have used both as well, and my experience is that the HC browser and email app is faster and the battery lasts considerably longer between charges, perhaps twice as long. I use it at least an hour a day with no forecloses/stability issues.
